Instructions

  1. heat avocado oil in a pan

  2. mix the chickpea flour and water together (note add more water for a thinner pancakes and less for a thicker one just depends on what you like)

  3. pour batter into the pan

  4. add toppings (kale, scallions, spinach can be added into the batter and cooked)

  5. let the pancake cook until it is golden brown and bubbling and then flip

  6. Allow this side to cook for 3-5 minutes

1/2 cup chickpea flour

3/4 cup water

avocado or olive oil

some toppings ideas

  • kale, spinach, arugula

  • za'tar

  • lemon

  • pesto, tzatziki, tahini, green goddess dressing

  • scallions, picked red onions

  • sesame seeds
