Falafel
This traditionally middle eastern dish is a go to for me. I’m a big fan of chickpeas because they’re high in protein, fiber in magnesium. I love magnesium because it can reduce anxiety, migraines, PMS, and muscle aches.
Ingredients
1 can of chickpeas
1/2 a bunch of parsley
1/2 bunch of cilantro
10 sprigs of mint
Shallot
3 Garlic Cloves
Oil for frying (I like avocado oil)
3 tablespoons of chickpea flour
salt
1 teaspoon baking powder
1 teaspoon cumin
1 teaspoon cardamom
Instructions
Coarsely blend chickpeas and put into a medium bowl
Blend parsley, cilantro, mint, shallot, and garlic together
Mix it with the chickpeas
Add in chickpea flour, salt, baking powder, cumin, cardamom
Roll into small patties
Heat a few tablespoons of oil in a dutch oven heated to about 300
Cook until browned on each side
Let your patties rest on paper towels
