Coconut Soup

This recipe is inspired by a recipe in The Clean Plate by Gwenyth Paltrow

4 cloves of garlic

3 inches of ginger

Coconut or Avocado Oil

1 can coconut milk

4 cups chicken broth

2 tbsp coconut aminos or soy sauce

1 tbsp fish sauce

chicken breast

white rice

broccoli

spinach

lime

Mince garlic and ginger (I usually do this with my zester because I like it very finely minced)

Coat dutch oven with oil

Add garlic and ginger and let cook, don’t let it brown if you can help it

Add coconut milk, broth, rice, fish sauce, coconut aminos, and chicken

Reduce heat to low and let chicken cook through (about 20 mins)

Remove the chicken and shred with two forks on a cutting board

Add spinach and broccoli and simmer for about 5 minutes

Serve with lots of lime, salt and pepper
