Sweet Potato Gnocchi

Ingredients

Sweet Potatoes

Thyme or Oregano

Flour

Earth Balance Butter

Spinach

Instructions

Poke holes in sweet potatoes with a fork and then bake in the oven on a sheet pan at 400 until soft ~~ 40 mins

Scoop out sweet potatoes once they’re cooled a bit and mash into a large bowl

Add herbs, salt, and pepper

Start boiling heavily salted water

Add flour one tablespoon at a time to the sweet potato mixture until the mixture is soft, but not sticky * this will vary depending on how big your sweet potatoes are or how many you use

Flour your work top and begin to roll a portion of your dough into a snake shape

Cut into little gnocchi pillows

Place your pillow into boiling water and wait until they pop up to the surface

In a nonstick pan melt a pat of “butter” and begin to add the gnocchi with a slotted spoon * some water getting into the pan is good so the gnocchi doesn’t stick

Add spinach and let cook

Serve with a squeeze of lemon and flaky salt
