Cilantro Soup

Instructions

  1. In a pot add the stock, water, and rice

  2. Let everything simmer together for about 10 minutes

  3. In a blender add the onion (skins removed), cilantro, and lime juice

  4. Add this to your soup and let the soup cook for another 10-15 minutes

  5. Season with salt and pepper before serving

    Optional add on:

    1. You can also add chicken to this recipe just add it in at the first step and let it cook through completely in the broth

    2. Once it’s cooked through shred the chicken on a cutting board and then add it back to the soup

Ingredients

1 half of a white onion

bunch of cilantro

1 tbsp lime juice

1 cup of rice (basmati or jasmine)

4 bone broth or stock

2 cups water
