Arugula Pesto Pasta

Instructions

  1. Bring water to boil in a pot and salt the water

  2. Add the pasta and let it cook until al-dente or however you like it

  3. In a food processor blend the arugula, basil, pine nuts, lemon juice, olive oil, and oatmilk

  4. Strain the pasta saving a 1/4 cup of the pasta water

  5. In a large bowl combine the pasta and the pesto if you want it a little creamier add a bit of the pasta water

Ingredients

1 lb of pasta

salt

2 cups of arugula

juice of 1 lemon

2 tbsp of pine nuts

3 tbsp olive oil

1 tbsp oatmilk

6 basil leaves
